Rhubarb Plants

Rhubarb is full of nutrients. It contains potassium, calcium, folic acid, beta-carotene, magnesium, and vitamins A and K. It is a hardy perennial with edible stalks varying in color from the deepest red to the palest green and in length from 10 to 24-inches. The leaves should not be eaten as they contain oxalic acid.

Rhubarb plants thrive in full sun or in lightly shaded areas. Well-aged compost worked an inch to the soil should be adequate fertilization. Only a few stalks should be harvested the first year in order to allow the plant the opportunity to successfully establish itself. After that, each plant will produce about 2 pounds of stalks each year, peaking in its third or fourth year. Read our Growing Rhubarb article for helpful growing and harvesting tips.
