Sweet Potato plants produce one of the world's richest, most flavorful vegetables. With their high fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, sweet potatoes are prized for their nutritional value. Sweet Potato plants grow best in a well-drained, loamy to sandy soil. If you do not have this type of soil, make a ridge before planting. They need at least 1" of water per week. Watering should be reduced as the plants come closer to maturity; this helps prevent the tubers from cracking. Northern gardeners would benefit from covering the ridge with black plastic about 3 weeks before plants are expected to arrive.
