Sweet Potato plants produce large, sweet-tasting, tuberous roots that are eaten as a vegetable. One of the most flavorful "superfoods”, sweet potatoes offer high fiber, complex carbohydrates, protein, vitamins A and C, iron, and calcium.
Sweet Potatoes grow best in a well-drained, loamy to sandy soil. If you do not have this type of soil, make a ridge before planting. When transplanting, fertilize with a low nitrogen vegetable fertilizer. Plants should then be fertilized with fish emulsion every other weeks throughout the growing season. They also need at least 1" of water per week. To prevent the tubers from cracking, reduce watering as the plants come closer to maturity.
