To insure that you don’t find yourself without one in the middle of your canning process, you should always have an extra on hand. This plug is critical to the safe operation of your pressure canner as it allows steam to be released in the event that the vent pipe becomes clogged, preventing your canner from building up dangerous pressure levels.
