Kohlrabi, or ‘Rabi’, to gardeners that have made this nutty-flavored, celery-like vegetable a staple in their garden, is maybe the hardiest of all vegetables, lasting long after the cold weather and frost have caused the rest of your garden to go dormant. It’s very popular in Europe, but is still somewhat of a closely guarded secret in the U.S.
You can start Kohlrabi in the spring, but the best crop will be for fall. Some growers grow both a spring and fall crop, though most growth occurs in cool weather. Seed is generally started indoors for the spring garden, but sown directly into the garden for the fall crop. If germinating indoors, cooler temperatures of 50-70°F are preferred. Under the best conditions, it takes 5-10 days for the Kohlrabi seed to germinate.
In order to grow the healthiest; best tasting kohlrabi, the pH level of your garden soil should be 6.0-7.0. A soil tester will take the guess work out of determining the pH levels.
