Collards are easy to grow and have juicy leaves with a mild cabbage-like flavor. They are an excellent source of beta carotene, vitamins C, A, and K, minerals and fiber. They have antioxidants and phytochemicals that may help to reduce the risk of some forms of cancer and heart disease.
Maintaining ample soil moisture during hot periods in the summer will produce an abundant harvest of Collards. All green parts of the plant may be harvested at any time during the growing season.
