Mustard contains large amounts of beta carotene and vitamin C, along with calcium and iron.
With a slightly pungent, peppery flavor, mustard greens (the leaves of the mustard plant), are a staple in Asian cooking, as well as a popular dish in the Southern United States. They’re delicious steamed, sautéed or chopped and added to soups and casseroles.
The mustard plant also produces the delightful brown seeds used in Dijon mustard. As is the case with all edible greens, mustard is super-nutritious and a cinch to grow. The leaves can be clipped as soon as they mature, and the plants just keep on producing more leaves throughout the season.
