Beets are an excellent source of the B vitamin, folate, and a very good source of manganese and potassium. They are delicious, nutritious and low in calories. In addition Beets are thought to play an important role in the prevention of breast cancer, lung cancer, stomach cancer and colon cancer.
Before planting, make sure that the soil is as loose, rich, and well-drained as possible, so that the root can grow without stress.
If you are using the leaves for salad; harvest them when they are 3-4 inches long. The beets can be harvested when they reach 1½ inches in diameter. Do not allow them to grow over 3 inches as they become tough and fibrous. See our Beet Harvest Tips page for complete harvesting instructions.
