Beets are an excellent source of the B vitamin, folate, and a very good source of manganese and potassium. They are delicious, nutritious and low in calories. Beets are also thought to play an important role in the prevention of breast cancer, lung cancer, stomach cancer and colon cancer.


Beets can be harvested when they reach 1½ inches in diameter. Do not allow them to grow over 3 inches as they become tough and fibrous. If you are using the leaves for salad; harvest when they are 3-4 inches long. See our Beet Harvest Tips page for complete harvesting instructions.
