Also spelled as one word, Lemongrass, it can be used dried or powdered—but its lemony flavor is most pronounced when fresh. Lemongrass can be sliced and added to cooking foods, but most chefs prefer to obtain its sweet-fragranced oils from large, bruised pieces that are removed before serving, since its tough stalks are difficult to chew. Lemongrass adds lemony flavor without the acid of lemons. Lemongrass is commonly used in teas, curries, soups and stir-fries. It is the source of citronella oil, an essential fragrance in the perfume industry. It has a calming effect as a medicinal herb, and is a popular natural mosquito repellant.
